I had a great morning…all thanks to a fantastic breakfast.
It’s the most important meal of the day, so I always make sure to make it worthwhile and satisfying.
The senses are all interconnected, so it is important to make food that appeals to all of them.
Today’s breakfast rocked in the sight department.
Look at this beauty:
CREAMSICLE OVERNIGHT OATS
-1/4 cup dry old-fashioned rolled oats
-3/4 cup non-dairy milk
-1 Tbs. chia seeds
-1/4 tsp. vanilla extract
-1.5 tsp. maple syrup
-2 Tbs. goji berries (a little less than 1/4 cup)
-1 small/medium frozen banana
-3 Tbs. non-dairy milk (for the softserve)
1.) Combine oats, non-dairy milk, maple syrup, chia seeds, and vanilla extract in a bowl and refrigerate overnight.
2.) In the morning (or whenever you’re eating), make the softserve by combining the banana, goji berries, and non-dairy milk in a blender and blending until a softserve consistency is reached. Don’t overblend or you will have a drink instead!
3.) In a bowl, alternate layers of the overnight oats and the softserve.
How gorgeous is this?!?
Not to mention totally delicious…
The softserve even has an orangey creamsicle taste to it, and the vanilla in the overnight oats makes the entire combo very authentic.
