My brain feels fried. Completely fried.
At least I have something to look forward to!…Max is coming to visit me tonight! I can’t wait to spend the weekend with him stress-free 🙂
I’m literally counting down the hours until Saturday 6pm (5pm maybe?) when I will officially be FREEEEEE!!!!
Ugh just please brain don’t shut down on me quite yet. I promise I’ll be good to you from now on!
I used to be the best student ever. And when I say ever I truly mean EVER. I had superpowers I swear. Typically, I would be able to study for 7-8 hours straight without even breaking a sweat. I would just get in the zone and not leave it for anything (well except for bathroom breaks).
That was back in high school.
Come college, I could still do that…and many times I still do. In fact, studying 7-8 hours total for an engineering exam is a breeze. You would be lucky if you only needed to study 8 hours!
But now it’s so much harder to do that! After years and years of exerting my brain power I think I am officially DRAINED.
It’s so sad and unfortunate, and most people I try to explain this to don’t seem to understand. I’ve given school (all 16 years of it) my all and I just can’t do it anymore. My body and mind don’t and won’t let me.
This is perhaps the main reason why I decided to put off graduate school until later. I desperately need a break. I honestly don’t think I could succeed in grad school feeling this unmotivated and drained.
I also need to figure out what I want to study in graduate school, which is yet another reason why I chose to put it off until later.
Either way, I know I want to continue my education. There is just still so much that I haven’t learned yet! How can I live knowing this?!? Answer: I can’t.
I am secretly a major nerd.
Since I’ve been non-stop studying, I haven’t had much time to make cool new interesting recipes, but last night I did make some sunflower seed butter that came out very good!
All I did was roast the sunflower seeds at 350° for about 15-20 min, flipping them constantly to achieve even cooking. Then I blended them with some maple syrup (added later…once the sunflower seeds were near the “butter” consistency).
I think I over-roasted the sunflower seeds because the seed butter was not coming out smooth. My solution: add some unrefined sunflower oil!
Perfect.
I loved it! I think I mentioned before how much Russian people love sunflower seeds, and I am no exception.
Hmm pretty sure my entire family would go gaga over this seed butter 🙂 I’ll have to try it out on them sometime!
This morning I wanted to take full advantage of this fantastic sunflower seed butter, so into my oatmeal it went. I combined some old-fashioned oats, half a banana, homemade almond milk, and about a teaspoon of the seed butter and cooked everything together on the stovetop.
Mango and sunflower seeds seem to pair well together, so I topped off the oatmeal with fresh mango slices and some more of the sunflower seed butter. Yummm
Ok, back to cramming hard-core for the exam...WISH ME LUCK!!!
